Currently the callout is "inserted" in between existing text. It would be very efficient if we could just highlight a piece of text and click on the Callout option to have that text immediately be put into the new Callout body.

Agreed. Most other editors have this. In addition, it would be great to cycle between the callouts once you've created one, as opposed to creating a new one and then pasting your content into that one.
